While manual labor is certainly cheaper, a professional dishwasher will clean dishes much faster and possibly more efficiently, not only removing food residue but also disinfecting them. A popular type of professional dishwasher for medium-traffic restaurants is the hood dishwasher, which is the subject of this article.

Features of this technique

Hood dishwashers differ from other types of professional equipment (tunnel and frontal machines) Their simple design makes them more reliable. The unique design is that dishes and kitchen utensils are loaded into the washing chamber from above, which is then covered by a special sealed, dome-like hood. The entire washing process takes place under this dome.

Separate baskets are provided for different types of dishes (plates, pots, glasses), as well as cutlery. Hot water is sprayed under pressure onto the dishes from above and below, and detergent is dispensed from dispensers. After washing, the dishes are rinsed in the same reservoir and dried under hot air. The entire process takes no more than three minutes, so the machine can wash up to 2,000 plates in one hour.

Please note! The machine can be connected to both cold and hot water supplies, but hot water requires additional filters to soften hard water.

Dome-type dishwashers can be equipped with additional tables for stacking dishes. A sink with a shower head for pre-rinsing food residue from items may also be included.

Varieties

Among the dome dishwashers, two types of machines can be distinguished:dome dishwashers

  • Bar washers, also known as glass washers, use water at a lower temperature than normal to prevent glass from cracking. They're suitable for washing not only glasses, but also teacups, shot glasses, goblets, and wine glasses. The resulting dishes are sparkling clean, without a single stain.
  • Dishware. Designed for most dishes, plates of various sizes, and cutlery.
  • Boiler washers. These machines are most often found in restaurants serving ethnic cuisine. They are typically used to wash large items such as pots, baking sheets, cauldrons, and frying pans. The water in these machines is heated to at least 80 degrees Celsius.

Some people classify dishwashers as high-temperature or low-temperature based on their temperature settings. High-temperature dishwashers heat water to 85 degrees Celsius, while low-temperature dishwashers only heat water to 70 degrees Celsius, so low-temperature dishwashers can't be connected to hot water, but they're also cheaper.

Budget dishwashers

ChuvashTorgTechnika offers the most affordable model of a dome dishwasher. It's the MPK 700K 01 Abat, made of stainless steel. Its capacity is approximately 700 dishes per hour. Water temperature ranges from 40 to 85 degrees Celsius. Gel-based detergents are recommended, with manual application for washing, and a special dispenser for rinse aid. The machine comes with a tray for various plates and tureens, a tray for glasses, and another for spoons, forks, and knives. It costs $2,245.

MPC 700K 01 Abat

The MPK 1100K is another hood-type dishwasher from a Chuvash manufacturer. It differs from the previous model in only a few features:

  • Power consumption is 3 kW higher and amounts to 13.5 kW/h;
  • Productivity – 1000 plates per hour of continuous operation;
  • There is a dispenser not only for rinse aid, but also for detergent;
  • The body has a built-in window that allows you to observe the progress of the washing process;
  • It costs $350 more.

Mid-range and premium models

Dishwashers in this class vary not only in price but also in technical specifications. Here are a few examples.

The DIHR HT11 is an Italian-made hood dishwasher with a capacity of up to 2,000 dishes per hour. Its energy consumption is 10.2 kW, and a wash cycle takes just 2 minutes. It features a rinse aid dispenser and a Thermostop function. This dishwasher can be installed in a corner. The average price is $2,877.

DIHR HT11

The Comenda LC 700 is a top-selling dishwasher. It features four wash programs, allowing you to clean even the most dried-on food. The sink height is sufficient for plates of any size. The dishwasher can be started automatically or manually. A thermostat keeps the water heated to no more than 85 degrees Celsius. It has a throughput of approximately 720 plates per hour. The average price is $2,930.

Comenda LC 700

The Elettrobar Niagara 381 is a hood-type dishwasher that washes up to 900 dishes per hour. This versatile machine is suitable for washing plates, cups, baking sheets, glasses, and other utensils. It is made of stainless steel and includes three baskets. It is also equipped with tables and a shower. The average price is $3,280.
